Parmesan Fish Fillets
Ingredients
  • 1/4 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp. dried thyme
  • 1/4 tsp. dried basil
  • 1/4 tsp. onion powder
  • 1/8 tsp. pepper
  • 1 lb. orange roughy fillets (can also use catfish, cod, pollack etc.)
  • 1 egg, beat to combine yolk and egg white (can also use 1/4 cup egg substitute)

    Directions
    *Preheat oven to 400 degrees.

    *Combine bread crumbs with Parmesan cheese and seasonings. Mix well. Dip fish in egg, and then coat with bread crumb mixture.

    *Arrange on a baking sheet that has been sprayed with non-stick cooking spray. Bake for 25 minutes or until fish flakes easily with a fork.

  • Makes 4 servings
  • One serving: 1/4 recipe (1 fillet)
  • Calories per serving: 185 calories
  • Fat: 5 grams
