Nebraska football fans are getting a taste of what's in store Saturday for the season opener against Wyoming, gathering Friday morning at the Ramada Plaza Omaha for the season’s first Big Red Breakfast.
Husker coaches will be on hand at 72nd and Grover to talk about the team and the upcoming games. The kitchen team meanwhile prepares food for 250-300 fans. Banquets like this are nothing out of the ordinary for the hotel, but there's something different about these Big Red feasts.
"It's a pretty big task just ‘cause it's high-profile, so we really want to make sure we don't falter,” said Turin Cox with the Ramada Plaza Omaha. “We spend a lot of time making sure that we've essentially crossed our t’s, dotted our i's, making sure that we have the right colors and everything so it looks good." When Cox refers to “the right colors" we all know he means just one color, including red napkins just for this event.
Hotel staff says they used to switch out breakfast meats each week, but fans spoke up and the consensus was bacon is a must-have every week. Sixteen-dozen eggs and endless trays of fruit and pastries are also on the menu. “We're really happy to be hosting the breakfast,” said Cox. “We're really passionate about being part of our local community and representing Nebraska in that sort of sense. Very proud to be in Omaha, so it's kind of a big deal. We're happy for it.”
Head coach Bo Pelini was initially slated to speak Friday, but a last-minute scheduling conflict came up so defensive coordinator John Papuchis takes the microphone for the first Big Red Breakfast. There will be 11 more during the season. Cost is $30 per person or $280 for a table of 10.
