Lobster Cakes With Spicy Avocado Relish

Ingredients

  • 2 ¾ Cups of Chopped Lobster Meat
  • 1 tsp. Fresh Garlic; chopped
  • 1 Each Egg
  • 1 Tbs. Cilantro; chopped
  • 2 tsp. Chives; chopped
  • 1 tsp. Celery Salt
  • Juice and zest of 1 Lime
  • 1 tsp. Cayenne Pepper
  • ½ Cup Panko Crumbs
  • Salt and Pepper to taste Spicy Avocado Relish: 2 Ripe Avocadoes; pitted and diced 1 Tbs. Red onion; fine diced 2 tsp. Garlic; minced 1 Small Habenero; seeded and diced 2 Roma Tomatoes; seeded and diced 1 tsp. Lime Juice 1 ½ tsp. Extra Virgin Olive Oil Salt and Pepper to taste Method: Combine all the above and serve with the Lobster cakes.


Directions

1. Using a large mixing bowl, combine the lobster meat with all the ingredients except the Panko crumbs. Mix thoroughly and season. Now add the Panko crumbs and mix until the mixture allows you to form it into cakes. Cook a small amount and taste for seasoning. Adjust if necessary and then form into 2 oz. portions and shape into cakes. 2. Now using a sauté pan heat the pan with about 1” of vegetable oil and fry the cakes on each side until golden brown. Set on a paper towel lined tray and serve warm.
