Baked Macaroni and Three Cheese
Ingredients
2 Cups Elbow Macaroni; cooked al dente
¾ Cup Parmesan Cheese
¾ Cup Asiago Cheese
¾ Cup Mozzarella Cheese
2 Tbs. Unsalted Butter
2 Tbs. Flour
3 Cups Heavy Cream
Salt and Pepper to taste
½ Cup Breadcrumbs
2 Tbs. Clarified Butter
Directions
1. Cook the macaroni until al dente. Drain and set aside
2. Using a medium saucepan, melt the butter and combine with the flour and stir until a thick roux develops. Now add the cream and stir well to combine and make sure there are no lumps. Add the cheese and stir continuously so the cheese is well incorporated. Add the macaroni and mix well. Season to taste.
3. Spray a 9x13 oven safe pan with pan release and add the macaroni, top with the bread crumbs and place into a preheated 400 degree oven and bake for about 15-20 minutes.
