Brownies


Ingredients
  • 2/3 cup sugar
  • 1/3 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup oats
  • 1/3 cup unsweetened cocoa
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup applesauce
  • 1 egg

    Directions
    1. preheat oven to 350 degrees
    2. pour into an 8x8 inch pan, and bake 20-30 minutes

    Caramel Fresh Apple Salad

    Makes 8 servings

    Ingredients

  • 20 oz. pineapple, canned crushed, un-drained
  • 4 red delicious apples, unpeeled, remove seeds, chopped
  • 1/2 box or 2 ½ tablespoons (1/2 box) from .9 oz. box of butterscotch pudding dry mix Sugar Free/Fat Free
  • 8 oz. frozen whipped topping, fat free

    Directions
    1. Mix pineapple with juice and dry pudding together until completely mixed. Stir in cool whip and chopped apples.
    Place in refrigerator over night.

    Brown Rice Pilaf

    Makes 6 servings (about one cup each)

    Ingredients

  • 1 cup brown rice, uncooked
  • 2 large carrots, finely chopped
  • 1 bell pepper, finely chopped
  • 3 ½ cups water
  • 1 Tablespoon garlic, minced
  • 1 ¾ cups frozen peas

    Directions
    1. Finely chop the carrots and pepper. Mince garlic.
    2. Put all ingredients in a pan.
    3. Cook until rice is cooked (following package directions), stirring occasionally.

    Tuscan Grilled Pork Chop

    Makes 2 servings

    Ingredients

  • 2 pork chops - 5 oz. each
  • 4 cloves garlic or as desired
  • 1 Tablespoon fresh rosemary, stripped
  • 1/4 cup parsley
  • 2 teaspoons lemon peel
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon olive oil

    Directions
    1. Chop garlic, then finely chop herbs and mix together. Add lemon zest, salt and pepper over the herb mixture and toss to combine.
    2. Drizzle chops with olive oil and rub liberally with herb mixture on all sides.
    3. Spray grill or grill pan with cooking spray. Grill chops 2 minutes on each side until evenly marked, or internal temperature of 150º. Allow meat to rest a few minutes.
