Extreme Dinner Makeover
Dinners in our household are looking a lot different!

First of all, sorry it's been so long since my last blog. MAJOR computer issues. Seriously, I've typed this blog like 15 times...so frusterating!
Anyways, like I was saying, dinners around here are changing. A few weeks ago a typical dinner might be meatloaf with a side dish that came out of a box, or pasta with alfredo sauce and garlic bread. I didn't give much thought (okay, NO thought) to the number of calories or fat grams we were eating. I just wanted the food I made for my family to taste good!
Now, I am definitely taking notice of how many calories I am eating a day, but also how many grams of saturated and trans fat I am feeding my family. I am happy to report that even though our meals look different, they are still yummy and Kendall and Ryan have been eating them up. I thought I would share a few things we have eaten this week...
One night we had turkey hotdogs. I'm not a big fan of hotdogs to begin with, but I tried these and they were pretty good. We had them on wheat buns (so not a wheat bread family, but again, we liked these). We piled them with tomatoes, onions, peppers, relish, and mustard and had some strawberries as a side dish!
Another night we had some grilled orange roughy, brown rice, and edamame. Toni, our Alegent dietition, said we should be eating seafood twice a week. Before, we probably had seafood once every few months!
On Wednesday night I made buffalo chicken wraps-grilled chicken, Frank's hot sauce, lettuce and low fat ranch all rolled up in a wheat tortillas-so good!
As a mom, I feel really great about the fact that I am feeding my family this way. I am enjoying "the hunt" of finding healthy meals that still taste good.
On a LIGHTER note-I have lost 7 lbs and 3 inches off my waist! Woot Woot! Although I did let Ryan cook dinner tonight, and I am pretty sure I probably gained 5 of those lbs back-I'm going to add 15 more minutes to my walk tomorrow!
