He reminded me that I probably won't be eating much of my favorite breakfast in the entire world, and quite possibly my all time favorite meal-Juevos Rancheroes. If you don't know what it is, stop reading this blog right now. Because once you find out, you will want to eat it, you will have to eat it, and then you will abandon my blog and eventually curse me for introducing you to heaven on a plate.
Juevos Rancheroes is eggs (I get mine over easy), cheese, a tortilla, chili con carne, beans and rice. There is nothing else like it in the world. We get it from a place down in South Omaha, and we are always giddy on our way to the restaurant becuase we know what is ahead of us! I am embarrassed to say that every single time I eat my entire plate, and then wait for Ryan to give up on his so I can finish it. Just thinking about it right now is making my mouth water.
See, I love food. I don't eat because I'm bored, or depressed, or upset...I eat because I like food. I especially love food that I know is not good for me. That is why diets I have tried in the past don't work...because I deny myself food that I simply can't resist.
So I am not going to say that I am not going to eat Juevos Rancheroes again...or artichoke dip, or pizza, or steak phillys, or ice cream or anything else. I am simply going to change my thinking towards food-to really think about what I am putting into my body. And it is my hope that at the end of the next 12 weeks, I will be making healthy choices on a daily basis, so that on occasion, I can eat all of those foods that I love.
One of my goals for this week was to cook a healthy meal for my family at least two nights. I am proud to say I have already accomplished this goal. Tonight we had spaghetti made with ground turkey, whole wheat pasta, and a sauce that was labeled "Heart Smart." I wasn't sure how it would go over with Ryan and Kendall-but they both liked it!
Dinner on Monday was Smoky Citrus Shrimp and Brown Rice. I am sharing the recipe below as the first official Wednesday Food Day Recipe. I really hope that all of you will find healthy recipes to share on this blog!
Ingredients
1. 2 pounds large shrimp, shelled and deveined
2. 3/4 teaspoon chipotle powder
3. Kosher salt
4. 2 tablespoons extra-virgin olive oil
5. 6 garlic cloves, very finely chopped
6. 1/2 cup fresh orange juice
7. 2 tablespoons fresh lemon juice
8. 2 tablespoons fresh lime juice
9. 1/2 cup flat-leaf parsley leaves, minced
Directions
1. In a medium bowl, toss the shrimp with the chipotle powder and 1 teaspoon of kosher salt. In a large skillet, heat the olive oil. Add the shrimp and cook over high heat, stirring frequently, until they begin to turn pink but are still raw in the center, about 2 minutes. Using a slotted spoon, transfer the shrimp to a plate.
2. Reduce the heat to moderately high. Add the garlic to the skillet and cook until lightly golden, about 1 minute. Add the orange, lemon and lime juices and boil until slightly thickened, scraping up any brown bits from the bottom of the skillet, about 2 minutes.
3. Return the shrimp to the pan and toss to coat with the sauce. Cook until the shrimp are white throughout, about 1 minute. Stir in the parsley and season with salt. Transfer to bowls.

One Serving 329 cal, 11 gm Total Fat, 1.8 gm Saturated Fat, 9 gm Carbohydrates, 1 gm Fiber.
*This is too spicy for Kendall to eat!
*We ate our on some brown rice! Delicious!
*Chipolte Chili Pepper can be hard to find. It is available at some grocery stores in the area, I just can't remember which one, we happened to have some in our pantry from the last time we made it.
*I totally meant to take a picture of it to post, but I was so hungry and it smelled so delicious, that I completely forgot!
I can't wait to try out some new recipes. I love to cook and I really hope I can find some great ones for my family.
I have to give another big thank you to my sister for walking with me again tonight!! My feet are killing me this morning, and I have two huge blisters on my heels-but I am proud of them! I'm hoping I can walk again tonight, but if the feet aren't up to it, I plan on doing an ON DEMAND workout!
