Thanksgiving Day Preps

Anyone who has cooked a Thanksgiving dinner knows how stressful it can be but how difficult is it to cook the traditional turkey dinner for hundreds? The cooks at the Siena Francis House have been preparing tomorrow's meal for days.

Seasoned and ready for the oven this turkey is one of 30 Harold Patsios is preparing in his kitchen at the Siena Francis House.

Harold Patsios says, "We started prepping the turkeys on Sunday."

Cooking six turkeys per day Patsios and his crew have the main course almost taken care of now they are concentrating on the stuffing.

Harold Patsios says, "We're preparing all the fixings, all of the trimmings, all of the things you associate with Thanksgiving."

But Harold and the rest of the employee training staff are doing their Thanksgiving on a much larger scale than most.

This year the Siena Francis House will serve nearly half a million meals. The number of Thanksgiving Day guests is expected to be high.

Mike Saklar says, "Our best estimate is that we'll have about 400 to 425 people for dinner also some of the people from the community."

The dinner will be ready thanks to some preplanning.

It is not just that Harold and his crew are preparing Thanksgiving dinner for around 400 guests it is that they have to prepare for the feast while still serving breakfast, lunch and dinner at the Siena Francis House like they do every single day.

Harold Patsios says, "We have kind of a time schedule that we adhere to, the turkeys of course we can do ahead of time because we can de-bone those and freeze the meat so we can save those for a few days."

And serve them up to hundreds on Thanksgiving.

Executive Director Mike Saklar says Thanksgiving Day volunteers help tremendously. This year Mayor Suttle and his staff are volunteering as well as football players from the United Football League.
