The Celiac Sprue Association is teaming up with Creighton
University Medical Center on Wednesday, July 25 to bring gluten-free menu options to the recently renovated cafeteria.
CUMC will become the first hospital in Omaha to offer gluten-free options.
CSA’s director of nutrition programs, Shelly Asplin, MS, RD, LMNT, will train the Creighton food service staff in two educational sessions prior to the opening of their gluten-free food station at the hospital’s main cafeteria. Staff will learn new recipes and how to properly prepare gluten-free items.
This training is part of CSA’s mission to spread awareness and education about celiac disease and gluten-related disorders.
Creighton University Medical Center welcomes the public to try the new gluten-free offerings in the hospitals main cafeteria Monday - Friday from 11 a.m. - 2 p.m. Gluten-free options will also be offered
during breakfast beginning early August.
“The Celiac Sprue Association is pleased to be a part of this new venture in gluten-free culinary experiences with Creighton University Medical Center,” said Asplin. “CSA applauds CUMC for meeting the needs of individuals with celiac disease and gluten-related disorders by providing safely prepared gluten-free meals in the Omaha community.”
