An Omaha third-grader is showing off his culinary talents to Channel 6 News after his winning recipe landed him a trip to meet first lady Michelle Obama last month.
Aaron Beckman entered a contest sponsored by Mrs. Obama challenging children around the country to create lunchtime meals that kids would actually eat. The Healthy Lunchtime Challenge was part of her “Let's Move Campaign!”
Beckman created what he calls the “Apple Alien.”
“I had skewers and then I put them on an apple for a base and the skewers made it look creative. Then I added fruits and vegetables to make it look like an alien.” He included turkey breast, peanut butter, cashews and ranch dressing for ingredients.
Beckman’s creative “Apple Alien” recipe was chosen to represent Nebraska at the first ever Kid’s State Dinner in the east wing. Beckman says his favorite part was meeting the first lady. “Michelle Obama actually hugged me and I got my picture taken with her.”
At the luncheon he was one of three winners who Mrs. Obama mentioned by name. Beckman walked away with plenty of memories and a jar of honey from the White House Beehive. And ever since having the winning recipe, the 8-year-old says he eats healthier. “I’ve only eaten desert once a month."
