Cooking for Company

Mother's Day; graduations; Memorial Day -- May is full of gatherings and that can mean cooking for company. In this month's Food for Thought, Marilyn Wadum shows us how to make entertaining a bit easier.

Marilyn says, "You might have more people over during the May holidays. How can you make food for a larger number of people and still have it be healthy food and safe food? The first tip is you can make your own home recipes, either double or triple the amount. We do advise not making a half more of the recipe because it changes the recipe and your outcome may not be what you want it to be.

"One of our favorite recipes is just to use mixed greens with some type of fruit and an oil free dressing. Today I have hearts of romaine from a grocery store. Take that, put it in your bowl -- this is for a single recipe it also calls for mandarin oranges to give it a sweet flavor. A tip is to put it in ice, keep it submerged and when you get ready for serving, put on your salad dressing, you have your lid so you're ready to go.

"Prepare the food without added oils or fats so you might grill or broil bake or poach, anything but deep fat frying or frying. In your baked products you might want to try a no fat or low fat dairy product. If you must use oil make it a very healthy oil live olive oil.

"Don't think that you have to make everything homemade. At your local grocery store you can get many prepared items. Today we have a multi-vegetable mix. All you have to do is buy them pack them in ice, and they're ready to eat. So for a healthy May with all your celebrations remember to keep it simple -- hot foods hot and cold foods cold, and enjoy your family and friends.
