Coffee, please ...

Our Channel Six Dietitian Marilyn Wadum is spending Mother's Day with her daughters and grandchildren, making a meal together. She posted some recipes the rest of the family can make for us on omahamomtomom.com

I've mentioned before I always have good intentions when I see recipes, but seem to have trouble following through. I am happy to report I made the caramel apple salad this weekend, and it was fabulous! I substituted Fuji apples for Red Delicious and my whole family loved it. What a bonus when something tastes good and is good for us.

Marilyn Wadum also started to get me thinking about kitchen gadgets. She raves about those vacuum systems. I'm more interested in the one cup coffee makers. I am the only one in my house who drinks coffee, and a fresh brewed cup in the morning sounds awfully nice. On a shopping trip this weekend, I had my husband buy one of the inexpensive machines as one of my Mother's Day gifts. I found Cappuccino pods and thought I was all set. I wish I could describe how bad it was, one sip and the rest went down the sink. The one cup coffee machine will be boxed up and returned to the store. Has anyone had any luck with these? Maybe it's you get what you pay for, and I just need to buy a more expensive model.

Tracy, I'm not a "coffee" person per se. However I do like cappucino's and the International Coffees. Everyone in my office drinks coffee so they have a brewed pot everyday. I bought the little 4cup coffeemaker for my personal use. I just run the water through it and then I can have whatever I want, International, cappucino, or hot tea.

I'm not much for anything with coffee in it, however my dad was. He used to have a maker that boiled a cup water in about a minute or less, then he put Foldgers instant coffee in his mug then it poored the hot water into the cup. I'm not sure where he got it, but he to this day still uses it. Maybe finding something like that would work for you, if you like the instant coffee.

Try a Mr. Coffee 4-cup coffeemaker, which actually makes about 2 mugs of coffee, using one coffee scoop of ground coffee. If you like Hazelnut flavored coffee, try Pears Hazelnut Coffee, Folger's Hazelnut, or Dunkin' Donuts Hazelnut Coffee.
